What to Drink With Beef Jerky: A Pairing Guide

Jerky is salty, savory and chewy, which makes it one of the easiest things in the world to drink with, and one of the easiest to get slightly wrong.

Start with beer

Cold beer is the default for good reason. The carbonation lifts salt off your tongue and resets your palate between pieces, and the bitterness in a pilsner or a pale ale gives the pepper something to push against. If you only try one pairing, make it a cold lager and a piece of the Original.

Then argue about wine

His niece disagrees, and she has a case. A dry Greek white with real acidity, an Assyrtiko for instance, does what beer does but with more precision. The acid cuts through the richness, the minerality sits well beside salt, and the wine stays dry enough that it does not turn sweet against the marinade.

If you would rather drink red, keep it medium bodied and light on oak. Something bright, like a Xinomavro or a young Grenache, works well. Heavy, tannic, high alcohol reds do not. Tannin plus salt plus dried muscle is a great deal of grip in one mouthful, and everything on the table starts to taste dusty.

The one for the spicy pouch

Heat changes the math. Alcohol amplifies chili, so the stronger the drink, the louder the burn. If you are working through something spicy, go colder and lighter than you think you need to: a crisp lager, a dry cider, or sparkling water with lemon.

Ouzo deserves a mention, because someone always asks. Over plenty of ice, cut with water, it is genuinely good with pepper and dried beef, and the anise does something interesting alongside the marinade. Neat and at room temperature, it will flatten everything else you put next to it. Your call.

The short version

Cold and dry beats warm and sweet. Bubbles help. Acidity helps. Tannin does not. And whatever you pour, tip the jerky onto a plate instead of eating it out of the bag. You will eat half as much and taste twice as much.
